Euphie really liked Iroh even though they only spoke once, so she was happy to meet the nephew he'd been searching for. Even with Katara being very much not his biggest fan, she thinks he is a good person who lets his temper get a little carried away at times. She's a little amused by his outbursts really, but she also feels like he could use a friend.
She picks up on some of the loneliness in him I think. She doesn't like feeling lonely herself. She grew up in a huuuuuge family—comically huge—and even though neither of her parents were really in her life (a little headcanon-y here) she had siblings that meant everything to her. But then Lelouch and Nunnally were sent away and her older siblings like Cornelia and Schneizel had important duties to take on, so they couldn't spend as much time with her. Consequently, her fondest memories are of early childhood and everything after that has a thread of loneliness running through it.
Am I just rambling about Euphie now? Aaaanyway, she doesn't want Zuko to be lonely! Of course this isn't quite on a conscious level here. I think she would like him more as she gets to know him.
She will also not be at all afraid to scold him if he gets too out of control with things. ^^
